How It All Began

Milford Bay Trout Farm began with the Uhde family and 200 acres of land outside Bracebridge. Rolf and Edith Uhde moved from Niagara Falls in 1973 with their four children to seek a healthier, more self-sufficient lifestyle. They wanted to provide a place where people could fish, and there was an excellent network of spring-fed ponds on the site that was just perfect. In 1974, with the whole family working together to get the trout farm up and running, Milford Bay opened to the public!

The Art of Aquaculture

The focus in those early years was nurturing tens of thousands of young, high-quality fingerling trout to create the best breeding stock possible. As the fish matured, the ponds began producing record catches…the farm’s largest trout was a 13½-pounder that was caught in 1978 by the legendary Montreal Canadiens forward Steve Shutt!  In the early ‘80s, word began to spread about the quality of the fish coming out of the ponds.  By that time, Rolf had begun smoking his trout using hardwood chips into beautiful smoked fillets.  The artisanal quality of the smoked products made them very popular with residents and visitors to the Muskoka region.  Based on this success, the fishing pond and the sale of live trout to other breeders took a back seat to the products coming out of the smoker.  Rolf and his sons saw the need for consistency in the product, so the next big move was a processing facility in 1986. They invested in a modern smoke-oven and innovative equipment to deal with the ever-increasing demand for their specialty smoked trout.

Streamlined Operations

The demand for Milford Bay’s smoked products continued to grow, with word-of-mouth across the region driving consumer interest and growth. As more retailers across Ontario became our partners, further production capacity was needed. In 2017, we opened a larger, customized processing facility just off Highway 400 at the Parry Sound Area Municipal Airport business park. Every step of our production and packaging process is handled here…from preparing the fish that come to us from Manitoulin Island to smoking each piece using hardwood chips to packaging all our products with care.  Our retail store is also located here to serve locals and friends passing by.

Today's Company

Currently, you can find Milford Bay’s assortment of high quality, artisanal products at retail grocery and fine food stores across Ontario.  They are also available at the retail store at our facility and the many local farmers’ markets and festivals that we attend every summer.  We continue to develop new product offerings and innovative packaging while always maintaining the attention to detail our company’s reputation was built on.  Thank you for over 50 years of your support.  We put everything we’ve got into our food, and we know you’ll love it!
